Khai Mod Rin 3, a local rice in Nakhon Si Thammarat, Thailand, contains high amounts of protein, vitamins and minerals. Development of popped rice snack bars from Khai Mod Rin 3 for pre-school children was developed according to the nutritional value of the food in daily guidelines for children ages 3-5 years. The popped rice snack bar made of Khai Mod Rin 3 had a good opportunity to be served as part of healthy meals for pre-school children.
